San Floriano del Collio nestles among gently rolling hills covered with vineyards, cherry trees and acacia woods, in Gorizia province, near the Slovenian border. It is here that Mariano and his wife Loredana planted their first vineyard in 1972 on a small plot of land in Asci hamlet. Over the years their great commitment and enthusiasm has allowed the estate to increase its surface to approximately 30 hectares, situated in Collio and Friuli Isonzo DOC areas, which have always been prime winegrowing country and recognized as Italy’s prestigious winemaking areas. Walter and Luana, the owners’ children, and Denis, grandson, each took up role in the business to help Mariano and his wife on this family-run wine estate. Collio vineyards are situated at an altitude between 150 and 250 meters above sea level in a soil composed by marl and sandstone stratification, rich in structure and minerality, locally called «ponka». Most of production comes from this DOC area, where are cultivated white grape varieties as Pinot Grigio, Sauvignon Blanc, Chardonnay and Ribolla Gialla. Friuli Isonzo vineyards are situated on a plain of alluvial soil along Isonzo river, just south of Collio, in a soil with low limestone content and composed of noble clays with red gravels of recent alluvial origin. White grape varietals as Pinot Grigio and Friulano and Red grape variety Cabernet Sauvignon are cultivated in these DOC area. Wines comes from a production in vineyard of 7 tons per hectare, with a traditional vinification where picked grapes are destemmed, subjected to a soft pressing preceded by a cold skin maceration for a few hours, in depending of variety. Fermentation and all stages of vinification for white wines are performed exclusively in steel. For the red wine, the traditional vinification process is followed by further ageing in oak barrels. The entire process, from pressing to bottling, is constantly monitored using modern techniques with the sole aim of achieving the highest quality of product; wines that show a pleasant freshness, with fruity and floral notes and a good body and minerality, characteristics that come from production area and vinification process. Suitable in every occasion, as aperitif or for all courses, these wines goes well with many types of dishes, meat or fish based in different recipes.
