Saint Guilhem, established as a wine producing estate in 1738, owes it name to the Count of Toulouse, Guillaume de Gellone, who was canonised in 1066 under the name of Saint Guilhem. The fine wines and spirits of Domaine Saint Guilhem won recognition in past centuries. After a gap in vine-growing during the 1980s, the estate now includes 7 hectares of vineyards, meadows and woodlands, with various rare species of trees.
