Spiriti Ebbri

We come from families where the production of wine for its own needs was ancient custom. As cellar helpers and lovers of wine, we have continued and enriched the ancient custom. And this is how Spirits Ebbri was born: a vision that became a body thanks to the intoxicated spirit of three friends. We are not full-time vine growers and what makes us survive is still of a completely different nature. But, in the narrowness of means and resources, perhaps, we can consider ourselves even more free and our wines are “wines of character”, frank and direct. We are happy to affirm, philosophically and poetically, that we produce libertarian wines, where indigenous yeasts and bacteria - within certain rules which, unfortunately, we are forced to define as "common sense" - do what they want, are rebellious and not easily controlled. The use of indigenous yeasts and bacteria is certainly much riskier and more complex, as a productive practice, but the possibility that the high biodiversity of the yeasts acting in the fermentation process may result in complexity of the final product is highly probable, as also probable is the possibility that this type of process may lead to wines of great quality and typicality. Extremizing, the selected yeasts and bacteria are certainly great workers, precise and well-to-do, but, after all, they are simply "mercenaries": they would work for any must and under any condition! And there is no doubt that in dramatic situations they can avoid losing the crop. But using them on principle is just a different way of understanding wine. If the term "natural" evidently induces many contradictions, it is also evident the intent that moves the producers of such wines, just as it is evident that most of the detractors pretend not to understand. We are neither oenologists, nor agronomists; we are "specialized farmers" and we agree with what a well-known and good winemaker says: "The winemaker has stopped at the notion that white wines must have at least a total acidity of 7 grams per liter, while the specialized farmer takes what nature gives him ”.
