This Aglianico is cultivated Roccamonfina Vineyard , ancient dormant volcano in Campania Region. Soil characteristics: The several eruptions have made chalky soil rich of mineral. Harvest time: on average in the last week of October. The grapes manually harvested , are winemaking in traditional method with consecutive fining in steel and glass. Fermentation temperature: 16 ° C
After 3 years ageing, this wine acquires the following tasting notes: red rubin with violet reflections with intense aromas of black berry and ribes , mineral and floreal smell of withered rose typical of this variety. On the palate we find the evident fruity note , with Full-body and complex taste thanks to presence of tannins. This vine intensifies the taste of well- aged cheeses and red meat.
