Yield por hectar: 8000 kg
Sugar content: 6 gr/l
The grapes are precociously hand picked to keep an high acidity and a right alcool content.
The bounches are placed in small boxes containing approximately 16 kg and immediately transferred to the winery, just a few meters from the vineyard, passing trough a de-stemming machine then gently pressed into a vertical press and transferred into stainless steel tanks where the alcolic fermentation take place.
The temperature is controlled and never exceeds the 17°C. After the fermentation the wine is conserved at 10 °C till the preparation of the second fermentation in bottle.
The wine is conserved “sur lies” for 18 months before disgorging.
