GRAPE VARIETIES 100% Barbera grapes
PRODUCTION TECHNOLOGY The grapes are picked and pressed, then they are macerated into a basin for a whole night. The following morning is the right time to start fermentation and for the first two — three days we immerse the marc into the fermenting must to get a stronger wine structure. After the malolactic fermentation, we make a battonage for 3/4 months. At the end of this process the wine is stabilized, filtered and bottled.
TASTING NOTES Bright red colour, strong structure that supports ageing. Red fruits fragrance.
GASTRONOMICAL COMBINATIONS It matches with red meats and second courses, game and salted pork meats and aged cheese.
