Description
This barrel selection of the most concentrated barrels of Costers sees an additional 2 months aging in new French Allier barrels for a total of 16 months. We keep separate all of our different vineyard sites grown on costers. If certain barrels of these more ancient estates have a better evolution than others, we decide to produce this wine, not all the years have lucky.
Costers Production: Produced from grapes planted on slopes named in the region “Costers” (dramatically steep land, 45 degrees, where no machine can be used), where the vineyards are practically a hundred years old, a fact that provides a repeatable minerality, concentration and structure in comparison to other zones. The grapes undergo a 48 hour pre-fermentation cold soak followed by temperature controlled fermentation 24° to 26° celsius in small stainless steel vats, and are macerated for a 30 day period. Aged in new French Allier oak barrels of various toasts and coopers for 16 months.
