Young and slightly sparkling white wine. On the nose it presents itself with evident minerality, fruity hints of pear, but also of dried fruit.
In the mouth it is characterized by flavor and good acidity. Wine with a solid alcoholic structure, excellent with grilled fried salt cod or with a good pork butch

Immediate destemming, then manual pressing with vertical press, immediately in cask for spontaneous fermentation at cellar temperature, without added yeasts
