Description
Vinification process :Hand picking of the grapes, which had been left on the vine an extra two weeks until slightly over-ripe; they were immediately lightly pressed, with no use of SO2, followed by 20-day fermentation at 20°C in stainless steel. The wine rested on the fine less until spring and underwent natural malolactic fermentation in early summer.
Maturation : Eighteen months in steel and six in glass, then officially released December 1, two years from harvest, in accord with regulations.
Sensory profile : This is a wine born to celebrate the 20th vintage of Mirum and it will be produced only once, in this exceptional year. It is a unique, multi-vintage blend that draws inspiration from 2018 with further complexity added from the judicious addition of older vintages 2010 – 2012 – 2015 – 2016. The result is a concentrated marriage of depth, power and balance, a worthy interpretation of this unique anniversary. Notes of caramelised apricots, passion fruit and toasted almonds
