Wine made from 100% Godello grapes.
A terpenic white wine for drinking and storage. First vintage 2013.
The grapes are harvested by hand in boxes of 18 kilos first thing in the morning so that they can be taken immediately to the winery and the grapes arrive fresh. Once harvested, the grapes are destemmed and cold macerated for a few hours (depending on the year) with the help of carbonic snow. It is then pressed in a small pneumatic press and the resulting must is de-stemmed to obtain the desired turbidity.
Once the fermentation with yeast has started, the must is transferred to French oak barrels and foudres and to a small stainless steel tank where it will ferment at a controlled temperature. Once the fermentation is finished the wine remains in contact with its lees for a minimum of 6/8 months. During this period of time batonnage is carried out to bring the lees in contact with the wine. Finally a coupage is made.
