Description
When we decided to produce a Sauvignon Blanc we choose an easterly facing hill where the soil is completely limestone and four different french clones in order to obtain a fresh,salty and higly perfumed wine with a slighltly tipical scent
VINEYARD: 480 metres above sea level - easterly exposure
GRAPE HARVEST: by hand into crates
VINIFICATION: the must stays for six hours on the skins then is transferred in controlled temperature steel tank where,after the alcoolic fermentation,it remains on the lees for 24 months .Is then bottled and matures for 12 months before being released for sale
COLOR : deep straw yellow
PERFUME: yellow fruits (peach-apricot),white flowers , citrus and a very slight varietal nuance (green peppers)
SUGGESTED SERVING TEMPERATURE: 8-10 °c
PAIRINGS: fish, white meat. fresh and medium-mature goat cheeses,artichokes.
