VINEYARD
The grapes we use to make Antígona are selected from organic vineyards in Cigales area in
Valladolid (Castilla y León). These vineyards are cultivated using organic farming techniques and
they are audited and certified by the Castilla y León Organic Agriculture Council.
ELABORATION:
The harvest took place at the end of september 2020.
A part of the grapes were destemmed, crushed and fermented with their natural yeasts in concrete
tanks. With the other part of the grapes a carbonic maceration was made.
Subsequently the grapes were crushed until the end of fermentation with their stalks.
Once this fermentation has finalised both wines were joint and we let them rest until bottling.
