CESANESE DI AFFILE DOP - CAPOZZANO RISERVA
Capozzano is our flagship product since it fully represents our idea of the Cesanese. The red grapes are harvested when fully ripe at the end of October. The bunches are hand-gathered, selected, put into boxes and immediately pressed. After the first pressing, there is a pause of some hours so that the coloured pigments are extracted from the skins of the fruit. During the fermentation process, the must is left in contact with the grape skins for three weeks and is racked and returned (process of délestage) several times for an optimal extraction of tannins and polyphenolic compounds. The fermentation process extends 12-15 days at a temperature of 26-28 °C. The new wine is drawn off into French barriques for about 18 months. Then it is bottled and left undisturbed for a further 10-12 months. All this process guarantees a long ageing wine, very rich in colour, with a complexity of character and an intense aroma.
