COLLE MONTEVERDE Falerio Pecorino DOC
Description
My name is Colle Monteverde and in my taste I preserve the past of this land, made of agriculture and sheep farming. My name is linked to the local history of the Monteverde Castle and its owner, the Noble Rinaldo, a tyrant as much cruel as proficient in the combat.
My grapes are 100% Pecorino, an indigenous vine of the Marche Region, whose vineyards were formerly located along the ancient transhumance routes so that the Marche farmers used to call it "wine of the shepherds".
My distinctive feature is my unique scent of white flowers, jasmine and white peach, with an aromatic sensation, persistent in mouth with elegance. I have an outstanding alcoholic structure as well as a total acidity. My winemaking process: fermentation in stainless steel tanks at controlled temperature 16°- 17° C. Maturation in stainless steel tanks on the lees until March.
I can be consumed after 2 or 3 months of bottling.
I perfectly match with fish, seafood, white meats and cheese.
AGING POTENTIAL: 3-5 years.
