Description
Gioviano is our first wine. The wine with which Il Cancelliere started again in 2005. The wine that reminds us of the joviality with which we embarked on this adventure; reminds us of the past youth in the beautiful vineyards of Montemarano; reminds us of the temple dedicated to Jupiter erected by the Romans in Montemarano. Gioviano is macerated for about 20 days at an uncontrolled temperature, pressing with a pneumatic press. Ageing in steel barrels for about 6 months on fine lees, then about 12 months in 35 hl Slavonian oak barrels and at least 6 months in bottle.
An austere and direct red, almost baroleggiante.
