Description
This wine expresses to the maximum the typical aromas of the vine such as black cherry, plum and violet, whose intense combination can only be obtained with a pure Sangiovese. In the Gregorian Chant "Jubilus" is the expression of what the heart feels when words are not enoughThe grapes harvested by hand at the beginning of October, after a very light pressing, are placed in old brick barrels where fermentation takes place on their own yeasts and tannins, then remain in maceration for 15 to 20 days. The malolactic fermentation takes place in barriques. Limiting the racking, the refinement proceeds in barrique for at least 18 months, then the wine rests 6 months in bottle.
Tasting Notes: The nose has ample and deep scents typical of Sangiovese that over time are characterized by spicy notes, in the mouth it is enveloping with ripe tannins that evolve continuously giving very evolved nuances with a warm and persistent aftertaste. Jubilus is suitable for structured dishes and mature cheese
