GRAPES: selection of Bovale Sardo, Cagnulari, Barbera sarda, and Monic grapes mainly from the vineyard near the Nuraghe of Santu Millanu
SOIL: a very rocky hillside of approximately 2 ha facing south-east, particularly rich of limestone and difficult to work, but with good porosity and drainage
GRAPE HARVEST: generally during the last week of September, the grapes are hand-picked and collected in boxes of up to 20 kg
VINIFICATION: the fermentation occurs in 50 hl conical oak vats from Slavonia at a controlled temperature and the maceration takes about 12 days
REFINEMENT: “Lun” rests for approximately a year in steel barrels, which allow to retain some characteristics of the young wine;
ORGANOLEPTIC PROPERTIES: the wine has an intense ruby red color with violet tinges, an intense aroma with strong notes of caper, anchovy, and sweet spices. The flavor is elegant and consists of well-expressed tannin notes balanced by a singular acid structure that results in a crunchy and lively wine
