Description
GRAPES: 90% Cannonau with some additional red grapes traditionally grown in the area planted in the vineyard at Aiodda;
SOIL: on a hill facing south with granite terrain that is very deep and rich in magnesium
VINEYARD CULTIVATION: spurred cordon, with a Simonit & Sirch pruning system on a non-irrigated land
GRAPE HARVEST: between the first and second week of October; the grapes are hand-picked and carefully transported to the winery ;
VINIFICATION: the fermentation occurs in 50 hl conical oak vats from Slavonia at a controlled temperature;
REFINEMENT: “SOI” rests for approximately 2 years in 10 hl bigbarrels;
ORGANOLEPTTIC PROPERTIES: an intense ruby red color with garnet reflections; the aroma is very fine and complex at the same time, with hints of dried rose petals and ripe fruits such as the plum. The fruity and floral notes are balanced by an elegant scent of spices and light notes reminding of a typical Mediterranean maquis near a salty sea.
