Processing and vinification: grapes poorly treated with organic products, harvested when ripe and selected by hand on crates, de-stemmed, ferment spontaneously with indigenous yeasts only, macerate on the skins for 14 days (2 moon phases).
Subsequent inoculation of grapes and refermentation for 14 days, third inoculation and refermentation for 14 days, final refermentation in the bottle.
No clarification, no filtration.
Organoleptic notes: Revoluscion has an orange color.
Delicate and characteristic, persistent of fresh fruit and wild rowan, very ripe pear, quince, jujube, date.
Dry, fresh, harmonious taste.
Serve at a temperature of 8 degrees centigrade.
It has a natural deposit.
