Description
Golden color. The delicate roasting brings out lavender and sage, as well as cinnamon and white pepper. On the palate the dry and evolved notes of dehydrated persimmon and candied fruit stand out. A slight astringency cleans the mouth. 22 days in contact with the skins after whole grape destemming. Soft pressing and spontaneous fermentation in steel tanks. Aging in new 20 hl oak barrel. Unfiltered wine. Aged or blue cheeses. Fatty fish such as turbots or eels. To be opened during great meals or meditations.
Colore dorato. La delicata tostatura fa emergere lavanda e salvia, oltre a cannella e pepe bianco. Al palato risaltano le note secche ed evolute di caco disidratato e frutta candita. Una leggera astringenza lascia la bocca pulita.
Formaggi stagionati o erborinati. Pesci grassi quali rombo o anguilla. Vino da pasto o da meditazione.
