Planted on 1 ha at the heard of the Savennières-Roche-Aux-Moines confidential Appellation , this plot is  exposed South on the Loire river hillsides, the soil is made of silt covering  schists.
Manuel harvest with a cautious selecting picking to keep only the nicest grapes. During pressing, only the heart press is selected. 
2 years aging in new barrels.
Roche Aux Moines is a wine for aging. A nice expression in its youth but which will reveal so much in 10 years. 
A crystal nose, roots aroma, lemon verbena, gentian, with anise and mint notes. This cuvee has a kind of Auster ans also generous style.
It will perfectly taste with a lobster, a veal filet mignon and autumn vegetables.
