Description
Thanks to its particular and careful processing it offers intense and complex scents varying from ripe fruit to aromatic herbs, from spices to cocoa, to end with a round and harmonious taste with lively tannins. The grapes picked up in the first days of harvest are made ferment at temperatures that allow the increase of wine’s structure; when, after a week, fermentation stops, the grapes picked up during the last days of harvest are added. Fermenting at low temperatures, these ones give the wine its particular aromaticity.
The ageing of this wine takes place for 12 months partly in concrete tanks and partly in wooden barrels, and other 3 months in bottle.
Pairings: due to its aromaticity and softness it goes well with any first course, but thanks to its complex structure and strength, it can be combined with second courses such as roasts or grilled.
