Description
Nero d'Avola doc "Babalon" is born from the careful selection of the best grapes from the indigenous vines of north-western Sicily in the Alcamo - Camporeale area.
The vinification follows the principles of the modern Sicilian tradition, starting from the pre-fermentation maceration, followed by the fermentation at a controlled temperature lasting about 15 days and then refined in steel tanks, and French oak tonneaux for about 6 months.
All this allows to exhibit a full-bodied wine with velvety tannins and a red color with a plum purple tendency, which offers an intense bouquet of ripe red fruits, from cherry to blackberry. Spicy notes stand out.
A Nero d'Avola that is perfectly suited to a great variety of food pairings, in addition to classic red and white meats (beef, game and poultry) and medium-aged cheeses, prefers dishes with a strong taste.
This wine has an excellent longevity (+2 years).
