Description
Production area: Contrada Santo Spirito, Passopisciaro, Mount Etna - Northern
exposure.
Grapes: Carricante 90% - Catarratto 10%.
Soil: black, brownish volcanic sands 60-70%;volcanic rocks.
Training system: bush-training with chestnut poles. Up to 100 years old vines.
Plantation density: on average 8000 vines/Ha.
Average yield: 50 quintals.
Harvest: manual, last week of September.
Vinification: soft pressing and fermentation in stainless steels tanks with selected indigenous
yeasts.
Ageing: minimum 10 months in stainless steel tanks in contact with the fine lees and
minimum 8 months in the bottle.
Tasting: straw yellow colour, with a complex bouquet of white flowers, citrus fruit, honey, saffron, with aromatic herbs and petrol hints. It is fresh, juicy and persistent on the palate with a sapid finish.
Service temperature: 10-12°C.
