VARIETY: Cannonau 100%.
HARVEST: the harvest is manual, early in mid-September, to maintain the right degree of acidity of the must and an optimal content of aromatic precursors.
VINIFICATION: the grapes are processed directly in a soft press in order to obtain a must with a light color, like pomegranate juice. The must remains for about 10 days in the tank at 6-8 ° C, and after repeated batonnage, it starts a long fermentation of 3-4 weeks at low temperature.
AGING: in terracotta amphorae for 2-3 months "sur lies".
ORGANOLEPTIC CHARACTERISTICS: an incomparable shade of pink, with a sparkling hue, characterizes the color of this cannonau rosé. The nose is unexpectedly aromatic, with hints of rose petal, balsamic, pomegranate and with a second note of unripe cherry. A fresh and lively citrus aftertaste enriches the aromatic profile of this wine, which in the mouth is soft, full, balanced and with a long and fruity finish.
