COLOMITO - Salice Salentino RISERVA
Description
The grapes, coming from vineyard set in Salice Salentino (Lecce), are picked up manually, late September , carefully chosen before the wine-pressing. The must then is marinated on the skin for 20 days in steel cisterns, then it makes the malolactic fermentation. At the end the wine is aged for 12 months in barrels, bottled and aged for at least 12 months in bottles.
TASTING NOTES
Colour: ruby red.
Fragrance: deep, intense, with taste of mature red fruit and marmalade.
Taste: refined, solid, elegant, wiht a tipical note of chioccolate and tobacco.
FOOD MATCHING:
It goes perfectly with red meat, grilled or stew, perfect with aged cheese.
