Description
The grapes, coming from vineyard set in Salice Salentino (Lecce), are picked up manually, between the end of August and the beginning of September, and are carefully chosen before the wine-pressing. The must then is marinated on the skin at 25° for 20 days in steel tanks. Then, after the mallolattic fermentation in the steel tanks, it’s aged there for 10 months and for 6 months in barrels of different sizes. After the bottling process, the wine refines for other 3 months in the bottles.
TASTING NOTES
Colour : red ruby colour
Fragrance: ripe fruits, red fruits, with taste of marasca and scent of cacao, very smooth and refined
Taste: mellow, wrapping with especially sweet tannins

Its taste may be fully appreciated with starters and courses with vegetables or gravy, or with main course of grilled red meat, or seasoned cheese.
