Description
The grapes, coming from vineyard set in Salice Salentino (Lecce), are picked up manually, between the end of September and the beginning of October, and are carefully chosen before the wine-pressing. The must then is marinated on the skin at 25°for 25 days in steel cisterns. Then, after the mallolattic fermentation in the steel tanks, it’s aged for 9 months. After the bottling process, the wine refines for other 9 months in the bottles.
TASTING NOTES
Colour : red ruby colour close to violet
Fragrance: ripe fruits, red fruits, with taste of plum and marasca lightly spiced, refined
Taste: mellow, wrapping with especially sweet tannins

Its taste may be fully appreciated with starters and courses with vegetables or gravy, or with main course of grilled red meat, hodgepodge, or cheese medium seasoned.
