Places: the grape is found in the town of Castrillo de Duero, within the D.O. Ribera del Duero.
Strains: 100% Albillo Mayor, native variety of the area.
Land: Limestone and sandy clays.
Altitude: 800 m
Preparation: The harvest is done manually, is transported to the cellar in boxes of 15 kg. Once in the hold, the following processes (destemming and squeezing) are carried out at very low revolutions to respect the integrity of the grape. A pre-fermentative cryomaceration is carried out at very low temperatures, which prevent oxidation. The alcoholic fermentation is carried out at low temperatures (19º-20º) and by autochthonous yeasts, which gives it its powerful aromatic charge.
