Description
Appellation: Pays d’Oc organic sparkling wine
Soil: Terrace of pebbles with clayey subsurface
Comments of the cellarman:
Fine and intense bubbles. Wine with a nice intensity, honey and citrus aromas. Great sweetness at the end.
Vinification:
Blanc de Blancs elaborated under the "méthode champenoise" (method of Champagne) from our Chardonnay wine ready to drink. The "prise de mousse" (second fermentation which generates the bubbles) is done in bottles. The raising goes on for a period longer than 10 months. The wine is then refined with a "liqueur de dosage" which gives it its "brut" feature.
