Description
Pale straw-colored yellow with slight green hues, this wine is bight and clear with a nose of fresh grass, white fruits and of lemongrass and Mediterranean apricots. Harmonious, well-balanced acidity and elegant on the palate with a long finish.
The grapes are carefully selected from those which have been harvested at their maximum point of ripeness. In the early hours of the day, when the sun starts to peak over the horizon, the pressing is carried out at room temperature, taking advantage of the cool dawn air. This process gives its name to the wine. A conservative pressing of the grapes allows all their characteristics to be preserved. After a controlled fermentation process at low temperature, the aging process continues for 12 months in French oak barrels.
