100% Chardonnay from our certified organic grapes cultivated on the land of Basso Frignano (Mo), at the altitude of 450 mt a.s.l.
Vinification:
The grapes arrives in the winery and is immediately put in the cold cellar to reduce the temperature. Whole grapes are softly pressed to obtain a 50% yield from a free-run must. Static decantation of the must is carried out at 12 °, then the temperature is raised to start the natural fermentation and lowered back again to 16 °. Once the fermentation is over, the wine is kept in the battonage for 7 months on the fine lees. The tirage is then carried out without filtration during the second moon of March.

Characteristics:
It is of a beautiful golden-yellow colour, its fine, lively and refined froth immediately stands out, boasting with a pleasant complexity, it shows notes of citrus, lime and a hint of honey to the nose; well-articulated on the palate, dry, fresh, with a good flavor and balanced acidity.
