Description
From Tosca certified organic grapes (Uva Tosca)
(autochthonous) 90% Chardonnay -10%
cultivated on the land of Basso Frignano
(Modena) at the altitude of 450 mt a.s.l
("Sperimentale - Roseto" vineyards), harvest in
25 kg boxes by hand, yield 6000 kg per hectare.
Vinification:
Softly pressed to extract 50% of the 1st
flower must, once brought to the steel tank a
natural fermentation begins; several
decantings are made leaving the noble lees,
bottled in the 2nd decade of March with its
remaining sugar contents and its yeasts.
Resting on the yeasts: 14 months
Characteristics:
It flows into the glass with a delicate pink
color and a fine and persistent perlage. At the
first olfactory impact it denotes extreme
complexity, enhancing its unaltered flavor of
grape (Tosca), ancient vine from the upper
Apennines. You can feel
wild strawberries and hazelnut ice cream, when
tasting it is tense, juicy and rude.
