Description
100% Pinot Noir, our grapes from the land of Basso Frignano (Mo), cultivated at the altitude of 450 mt a.s.l.
Vinification:
The grapes arrives in the winery and is immediately placed in the cold store to reduce the temperature. Whole grapes are softly pressed to obtain a 50% yield of flower must. Static must decantation is carried out at 12 °, then the temperature is raised to start the natural fermentation and lowered back again to 16 °. Once the fermentation is over, the wine is kept in the battonage for 7 months on the fine lees. The tirage is then carried out during the second moon of March without filtration.

Characteristics:
This wine surprises with its exuberance and personality, subtly entering into the mouth and then exploding with a remarkable juiciness and minerality. Pleasant hints of raspberry, lychee and then turning into spicy hints of pepper and nutmeg.
