Description
From our certified organic 80% Grasparossa grapes-
20% Malbo gentile, cultivated on the land of
Basso Frignano (Modena) at the altitude of 450 mt
a.s.l., "Sperimentale" vineyard) harvest in 25 kg
boxes by hand, yield 5500 kg per hectare.
Vinification:
The grapes is de-stemmed by making only 4 days
of fermentation on the skins and then continuing it
only on the must until the desired sugar level is
reached, followed by several decantings. Bottled
in the 2nd decade of March with its yeasts and
sugar contents remaining from the first
fermentation.
Resting on the yeasts: 14 months
Characteristics:
It has a ruby-red color with a lively and purplish
foam. The olfactory spectrum is rich in
suggestions of red fruit (blackberry, cherry) in the
most juicy and fragrant form. Greedy on the
palate, invigorating and generous, with a fine
tannic grip.
