The constant search for quality through the care of the land in total respect of the landscape, production The vineyards stretch across the following production areas: Doc Friuli Isonzo, Doc Collio and IGT Venezia Giulia. Consortium for the Protection of D.O.C. Friuli Isonzo: The Isonzo river valley, a world of great wines. A unique universe, based on the perfect harmony between the full-bodied aromas, tastes and refinement of aromas, strongly linked to the varietal characteristics. Valuing the environmental peculiarities, studies have been carried out that have led to the division of the territory into homogeneous areas by type of soil and climate: the left of the Isonzo is characterized by low calcareous soils, rich in noble clays mixed with red gravels, while the right turns out to be very calcareous thanks to the presence of white gravels. Production techniques granted: a production between 60 and 90 quintals per hectare, the grassing of the vineyard, the use of mowing plant residues to integrate the soil, the thinning of the bunches in two periods to have a constant production by reducing green pruning and irrigation. In this way the intrinsic qualities of each vineyard will be enhanced, in the same territory, but characterized by its own peculiarities, due to both the microclimate and the soil variability. Consortium for the Protection of D.O.C. Collio: the name collio means hill, and it always refers to the wine obtained from the grapes coming from the vineyards cultivated on the corrugated Eocene soils that follow one another close to the border between Slovenia and Italy. Collio today means all over the world synonymous with great white wines: grape varieties such as Sauvignon, Pinot grigio, Chardonnay. No less important are the native vines, perfect harmony between history, tradition and the desire to identify a wine with its territory. The vineyards are south-facing, the training system is guyot, the age of the vineyards ranges from 10 to 20 years, the soil is gravelly, the altitude is 89 m asl., The harvest period is between September (white) and October (red). On all aromatic white grape varieties (Sauvignon, Chardonnay, Traminer) we apply cold pre-fermentation maceration, to extract all the aromatic components present in the grape. The controlled fermentation temperatures (15-17 ° C) allow us to obtain wines with a very complex aromatic set. In addition to this, the long sur-lies pause gives a greater softness and an excellent balance between all the components at the tasting level. Same thing happens for the red grapes destined to the most important wines. Pre-fermentation maceration for 48 hours, fermentation at controlled temperature, very soft extraction techniques to avoid excessive extraction of unwanted components and subsequent aging in barrique. The discriminated use of new woods allows for wines with a strong predominant varietal note.
